2004 Dundee Hills Pinot Gris

The 2004 Estate Grown Pinot Gris came from the top of the picturesque Black Family Vineyard. The wine is very fragrant, combining aromas of Asian pear, citrus blossom and honeycomb. The mouth feel is opulent, with the touch of residual sugar balancing the bright acidity. The fresh start gives way to ripe pear and peach flavors, with a lingering finish perfect for food pairing.

Our Pinot Gris is a lovely balance of bright acidity and a hint of sweetness. This opulent mouthfeel is full of green apple, nectar and honeydew. Stainless steel fermentation keeps the fruit perfectly balanced with crisp acidity and a clean, minerally finish. Enjoy the 2005 Pinot Gris with a wide range of foods, including oysters and other shellfish, buerre blanc sauces, or simply on it’s own.

True to the varietal, this Pinot Gris is deliciously bright, fresh and crisp. On the nose asian pear, lemon, and honeysuckle greet you. Granny Smith apples, key lime and red grapefruit open up on the palate. Characteristic of the vineyard, there's an interesting mineralty and acidity on the palate balanced by soft floral aromas. The silky finish and fresh, full mouthfeel are indicative of a great Pinot Gris.

A Little Lentil Love

Lentils {you can use the already made ones at Trader Joe's}
Cilantro
Avocado
Roasted Beets
Corn {Cut it off the cob raw or you can roast it 1st with a little olive oil}
Tofu {The Organic Teriyaki Tofu at Trader's goes great}
Feta
Rice Vinegar
a tiny bit of Olive Oil
Sea Salt & Pepper

Combine all ingredients, stir and eat.

Dundee Hills Pinot Gris – Food Pairings

Grilled Honey-Herb Shrimp

1/3 cup honey
¼ cup vegetable oil
¼ cup chopped green onions
8 TBS chopped parsley
2 TBS chopped thyme leaves
2 tsp grated fresh lime
1 TBS lime juice
½ tsp salt
24 uncooked (21-25 size) shrimp, peeled and deveined

In a gallon zip-lock plastic bag, mix all ingredients except shrimp. Add shrimp to bag seal and mix together. Refrigerate at least 1 hour to marinate.

Drain shrimp and discard marinade.

Bake shrimp on half sheet 10-15 min or until pink. Garnish with lime slices.
